Star Wars Lightspeed Cake

Arthur wanted a birthday cake with "two spaceships" on top, by which he specifically meant a Star Tours vehicle (Starspeeder 1000) and the Millennium Falcon. Thank you Amazon (and $35) for making dreams come true.

It's yellow cake with chocolate buttercream frosting, and white gel frosting from a tube to make the lightspeed or hyperspace.

Princess Jasmine Cupcakes

Having had a Belle and Rapunzel cakes, Sienna decided Jasmine was next on her list.  We looked at Pinterest and decided on teal flower cupcakes, and purple cupcakes with gold swirls, but then found tiny edible gold stars instead. I used my trusty Stable Whipped Cream Frosting.

Taco Seasoning

Another recipe I tried a million of and finally figured out.

This amount fits in my jar

Homemade Taco Seasoning
4 T. dried minced onion
8 t. chili powder
2 T kosher salt (or 4 t. table salt)
4 t. garlic powder
4 t. cumin
1 t. pepper

Granola

Homemade granola is something I've wanted to make for a long time and I've finally figured it out.  John loves it.

4 c. rolled oats
1/2 c. wheat germ
1 c. almonds, crushed, or 1 c. sliced almonds
1/2 c. pumpkin seeds
1/2 c. shredded coconut
1/2 t. cinnamon
1 T. vanilla
dash almond flavoring
1/3 c. oil
1/3 c. agave

Mix all dry ingredients, mix liquids, then mix together.  Bake at 300 for 15 minutes, stir, then bake another 15 minutes.

If you stir less (especially after you take it out of the oven) and press the granola into the pan, it will make chunkier granola.  Obviously you can mix up whatever nuts and fillings you like in your granola, add some brown sugar for extra flavor, and more.

Rock Climbing Cake

We went rock climbing for Dalton's birthday and I made him a rock wall cake. I had to order rock jelly beans online and they were big and not as good as chocolate rocks would have been, but I couldn't find those even online. But anyway, he loved it.
